Difficulty Level: Professional Time: 1hr 20mins approx . For the tomato sauce: 10-12 tomatoes 1/4 cup Basil Leaves 2 tbsp olive oil 2 cloves of garlic, chopped 1/2 tbsp salt 1/4 tbsp chili flakes . For the ricotta filling 2 tbsp olive oil 3 carrots 1 Red bell pepper 1 Zucchini 1 Red Onion 1/4 tbsp salt 5-6 ounces Spinach 2cups Paneer 1 cup ricotta(watch my recipe for homemade ricotta) . For the pasta: 3 eggs 2 cups all purpose flour Kosher salt to taste Drizzle of olive oil 2cups of Mozarella cheese . Steps: 1. Sift your flour and make a well in it. Add the eggs to this well and mix thoroughly. Add a drizzle of olive oil and some salt to taste. Knead for 5-10 minutes. Let it rest at room temperature for atleast 30mim 2. Heat 2tbsp olive oil in a pan, add you garlic and let it brown. Add you tomatoes let them sweat until a liquid consistency is achieved. Blend of necessary. Add chopped basil leaves, salt and chili flakes. 3. Cook your spinach till it's half the size, Add some salt, olive oil. Add the ricotta and paneer and blend it to a puree. 4. Dice your vegetables into small squares and cook then in some olive oil and add them to the ricotta filling 5. Assemble all the layers!! 6. Bake for 25-30 min in a preheated oven at 200 degrees!! -Anish Patankar
