Arrabbiata Pasta To make the marinara sauce - Ingredients-> 1. 2 Large tomatoes 2. 3 cloves garlic whole 3. 1 tsp Cayenne Pepper/Red chilli powder 4. 1 tbsp Olive oil 5. Salt to taste 6. Handful Basil leaves (optional) Method -> 1. Boil water in a vessel, add the tomatoes into it cut in halves. Blanch it for 3-4 mins or until the skin starts to peel a little. 2. Immediately put the tomatoes in cold water and de-skin them. 3. In a pan, heat olive oil and add garlic- sauté it for a minute. Add the blanched tomatoes,cook it till it softens completely. 4. Cool this down completely and in a mixing jar, grind it into fine paste 5. Again take the pan and cook this for 2-3 minutes for enhanced flcwour. Add cayenne,salt and basil leaves. To make the Pasta - Ingredients- 1. Pasta of your choice 2. 1 cup diced mushroom 3. 1/2 diced Capsicum 4. 1/2 diced Tomatoes 5. 1-2 cloves finely chopped garlic 6. Marinara (store bought/home made) 7. Salt 8. Black pepper 9. Oregano 10. Chilli flakes 11. Olive oil Method, 1. Boil water in a vessel. Add the pasta to it along with 1 tsp salt and 1 tsp oil. Cook it till Al Dente (not completely cooked, has a bite to it) 2. Hear some oil in a pan. Add garlic & saute it. Add mushrooms and cook them till they start leaving water. 3. Add the capsicum and tomatoes. Cook them a little but not completely. The tomatoes should soften a bit and the capsicum should have a crunch to it. 4. Add salt,pepper, oregano and chilli flakes. 5. Add the sauce. Cook it for abt a minute 6. Add the pasta, give it a nice stir and cook for 2-3 minutes. 7. If you want you can drizzle it with olive oil right before sewing to enhance the flavour. 8. Serve hot.
